dab’s lemon, sage, jalepeno chicken soup

1 whole Free-Range Chicken
1 head of Garlic, smashed
6 Red Potatoes, quartered
6 Carrots, cut into sections
1 Yellow Onion
4-6 Jalapenos
1 package of fresh Sage
juice of 8 Lemons
Rock salt and freshly Ground Pepper
H2O
1 or 2 quarts Chicken broth

 

First, cut and place all produce in a crock pot/stock pot.

Then add in whole chicken, h2o and Lemon juice.

H20 should leave the top of chicken exposed.

Salt and pepper the chicken. 

Add more h2o if necessary during cooking.

 

 

 


Cook for several hours until chicken is cooked, de-bone it then return the meat to the soup.

Let soup cool

Skim fat off surface.

Reheat when ready to serve.

 

 

 

 

 

 

Use Chicken broth to extend the soup if necessary

Have freshly chopped Spinach and red bell pepper for the garnish.

Lemon cools the heat of the Jalapenos. So the soup offers a delicate balance between hot and cool with a crisp flavor.
